Under the leadership of Executive Chef Callum Graham, our team combines classical technique with modern inspiration, making The Wild Rabbit one of the most exciting fine dining destinations in the Cotswolds.

ABOUT THE ROLE
This is a fantastic opportunity to take real ownership of The Wild Rabbit on our shoulder days. As Duty Manager for Mondays and Tuesdays, you’ll be the go to leader on site—setting standards, driving great bar service and light bites, and making sure every guest feels genuinely looked after. You’ll play a key part in keeping the week running smoothly, supporting the wider management team, and helping the business hit the ground running for busy trading days ahead.

YOUR RESPONSIBILITIES

• Be the welcoming face and on-site lead for The Wild Rabbit on Mondays and Tuesdays, ensuring the business feels calm, cared for and well run

• Deliver warm, thoughtful and intuitive service so every guest feels genuinely welcomed and looked after

• Lead the bar and Light Bites offering with confidence, encouraging natural upselling through great product knowledge and conversation

• Champion The Wild Rabbit and Daylesford standards across service, presentation and attention to detail in every guest-facing space

• Create a positive, supportive atmosphere for the front-of-house team and Building General Assistant, setting clear priorities for the day

• Delegate and oversee daily tasks, ensuring all areas are prepared, clean and ready for service

• Anticipate guest needs and resolve any issues calmly, professionally and with care

• Maintain excellent knowledge of menus, drinks and the wider Daylesford story, sharing it naturally with guests

• Support bar prep, stock control and cellar standards, helping set the team up for a strong week ahead

• Take responsibility for accurate cash handling, banking and end-of-day close-down

• Ensure all health & safety, licensing and compliance standards are met at all times

• Communicate clearly with the Restaurant & Bar Manager and wider team, sharing feedback, notes and any follow-ups

• Act as a positive role model and ambassador for The Wild Rabbit, leading by example in attitude, professionalism and pride

SKILLS AND REQUIREMENTS

•  A natural, guest-first approach to hospitality, with a genuine love of looking after people

• Confident leadership skills, with the ability to guide, motivate and support a team calmly and positively

• Strong bar and service knowledge, with an instinct for quality, detail and thoughtful upselling

• Excellent organisational skills and the ability to take ownership of a shift from start to finish

• A calm, solutions-focused mindset when handling guest feedback or unexpected challenges

• High standards and a great eye for detail, ensuring the site always feels welcoming and well cared for

• Confidence with cash handling, close-down procedures and basic operational administration

• Clear, warm communication skills and the ability to work closely with the wider management team
