Assistant Bakery Manager

Led by Michael Engler (Executive Baker), who spent 9 years as Head Pastry Chef at the Michelin-starred L'Enclume restaurant in Cumbria, before he moved into the world of artisan baking, the Bakery team make a range of artisan, hand-shaped, mainly sourdough breads, along with a small range of unique yeasted doughs, and artisan-crafted viennoiserie. With a working farm and in-house food production units at our disposal, the Assistant Bakery Manager has a fantastic opportunity to create innovative and seasonally-focused products that make use of our own ingredients, whether these are the fruits growing a few metres away in the Market Garden, or the organic dairy products produced by the Creamery Team under the same roof, including milk, yoghurt, cheese and butter .
ABOUT THE ROLE
There are 4 main working 'sections' within the Bakery operation, including: mixing doughs according to the batch recipes, shaping the doughs that are produced by the mixing process, baking the doughs once they've been sufficiently 'proofed', and also carrying out the lamination and production of the viennoiserie doughs that make our delicious and seasonally-changing breakfast pastries. The Assistant Bakery Manager will play an active role ensuring that all of these sections are covered by passionate and well-trained personnel, as well as leading from the front-line, working these sections expertly themselves to ensure that all of our customers receive a market-leading standard of product.
SALARY: £35000 per annum
HOURS: 45 Hours ( 5 shifts between Monday - Sunday, 15.30pm start)
The Bakery Team, of which the Assistant Bakery Manager leads and works alongside, produce the full range of products from scratch across 7 nights per week, ensuring that our Farm Shops and integrated restaurants receive only the highest-quality and freshest products. Each member of the team works 5 shifts across those 7, with care given to ensuring that two consecutive days off are given wherever possible.
RESPONSIBILITES
- Support the Head Baker in leading a team of night-shift Bakers in producing a range of organic breads and viennoiserie for supply to Farm Shops, cafes, and the Bamford Collection’s pubs/hotels, across 7 days a week
- Support in maintaining the award-winning quality of Daylesford Organic breads and viennoiserie
- Contribute to the development and launch of exciting and innovative seasonal Bakery products
- Oversee the execution of all baked products as per company specifications
- Ensure that all Bakery preparation is completed in a timely and professional manner
- Adhere to the organic standards as set out by the Soil Association
- Be adaptable and responsive to the business’s desire for seasonal range changes
- Deputise in the Head Baker’s absence
- Ensure that all ingredients are prepared, weighed and measured ready for production
- Supervise the team to ensure that all food production duties are carried out with care and diligence to guarantee the production of a consistently high standard of product, with minimal levels of wastage
- Ensure that the Bakery team follow the correct due diligence and traceability

Ensure that the team’s tasks are completed efficiently within the given timeframe - Hold full responsibility for the processing of daily orders and recipes
- Work safely and efficiently to ensure that all daily orders are completed above the required fulfilment rate
- Minimise wastage levels as much as possible
- Comply with the production unit’s internal audit requirements
- Aid the Head Baker in the fulfilment of the Bakery’s annual financial/budgetary targets
- Assist in the line management, development, and motivation of the Bakery team
- Assist with the induction and training of new team members
- Participate in the effective communication among the team regarding any changes to recipes, procedures, and/or operational needs, and with the company and customers regarding any quality issues/shortages within required timescales
